Beet Gnocchi

Beet gnocchi make their color known before their flavor. Beneath the pink is a sweet, earthy note that gives even a simple plate of dumplings a distinct personality.

Beets bring more than color

Beets join potato in the dough, giving it a flavor that remains noticeable under sauce. It is deeper and earthier than the sweetness of pumpkin or sweet potato. The color can range with the beets and the balance of the mixture.

Acidity and salt make a useful contrast

Citrus, goat cheese and peppery greens bring sharper flavors beside the beet dough. Ricotta and butter take a gentler approach. Beet gnocchi also suit a salad-style dish, where browned dumplings sit alongside fresh leaves rather than under a heavy sauce.
