World of Gnocchi

Mushroom Sauce for Gnocchi

Mushrooms give gnocchi something substantial to sit beside. Their savory flavor and firmer texture make a useful contrast to soft dough, with or without cream.

Creamy comfort or a more textured plate

In a cream sauce, mushroom flavor spreads through the coating while the pieces keep their own bite. Without that thick sauce, browned mushrooms and onions feel more separate from the gnocchi. Crisp edges become a larger part of the meal. Both approaches can be mushroom-centered without needing meat to complete the flavor.

Beyond one kind of mushroom

White button mushrooms are mild enough to share the plate with chicken or bacon. Chanterelles have their own place in the collection, including a pairing with hazelnut gnocchi. The truffle dish is another direction again: ordinary mushrooms provide the substance and truffle oil supplies an aromatic accent. It is not a plate of fresh truffles.
