World of Gnocchi

Tomato Sauce for Gnocchi

Soft potato gnocchi have a quiet flavor. Tomato gives them something sharper to play against. That sweet-tart contrast explains much of the appeal of a simple red sauce, even before basil or cheese enters the picture.

Ripe tomatoes of several sizes, a bowl of richly red tomato sauce with a basil leaf and a wooden spoon resting on a saucer, pale stone kitchen surface.

One ingredient, two very different textures

A smooth tomato sauce makes the whole bowl feel saucy. Cherry tomatoes bring little pockets of juice and a texture of their own, with more of the gnocchi left exposed. The first suits a soft, comforting plate; the second has a looser, more vegetable-forward feel. Neither depends on a long list of extras.

Tomatoes and cheese

Tomato's acidity is especially welcome beside rich cheese. Melted mozzarella gives gnocchi alla Sorrentina its soft, stretchy topping, while fresh stracciatella stays creamy and separate. Against browned gnocchi, those fresh spoonfuls create a contrast of crisp edges, tart sauce, and mild dairy. The tomato remains important in each combination, rather than disappearing beneath the cheese.
