Spicy Gnocchi and Chile Sauces

Spicy gnocchi can be crunchy, tangy, smoky, or slightly sweet. Chile heat is only one part of the sauce's character, and soft potato dough makes those differences easy to notice.

Crunch, vinegar, or a thick paste

Chili crisp contributes seasoned oil and crunchy pieces. Buffalo-style sauce has a sharper vinegar edge. Gochujang brings a fuller, sweet-savory flavor to butter or cream, while jalapenos give a fresher pepper bite. The same level of heat would not make these sauces taste alike.

Tomato and chiles have several sides

Arrabbiata keeps the sauce fairly direct, with crushed red pepper against tomato acidity. The dried-chile sauce in birria-inspired beef gnocchi is darker and more substantial. Cream and cheese soften the impression of heat in other dishes, whereas an oil coating leaves it more exposed.
