Carbonara Sauce for Gnocchi

Carbonara gives soft gnocchi a glossy, savory coating with crisp pork and a noticeable pepper bite. It is rich without tasting like a cream sauce.

Pecorino wedge, a whole egg and a separate small bowl of golden egg yolks, guanciale strips and black pepper on a rustic kitchen table.

Creaminess without cream

Egg yolks, cheese, and pork fat give the sauce its body, with cooking water keeping the coating fluid. Pecorino brings a sharper, saltier character; Parmesan adds another savory note. The result stays close to the surface of each dumpling rather than forming a deep pool.

What guanciale contributes

Guanciale is dry-cured pork jowl. Its fat is part of the coating, and its browned pieces give the dish a firmer bite against the dough. Black pepper remains prominent beside that rich pork flavor. Mild potato gnocchi make a good background for both.

Carbonara and Alfredo feel different

Our cream-based Alfredo is mellower and more uniformly saucy. Carbonara has a stronger cured-pork flavor, a sharper cheese note, and distinct crisp pieces. The choice is less about which sauce is richer than which kind of richness you want.
