Eggless Gnocchi
Eggless gnocchi are a whole group of doughs, not a single substitute recipe. Potato and flour can hold a dumpling together without an egg.

An egg is not essential to every dough
A potato-based mixture already contains starch, and flour supplies more structure. Other eggless doughs rely on beans, tofu or a cooked flour mixture. Their textures differ, so an eggless label says more about the ingredients than whether the gnocchi will be soft or crisp.
Eggless and vegan are different
Eggless gnocchi can still come with butter, cream, cheese or meat. Vegan recipes exclude those ingredients too. The eggless collection covers the entire dish, including the sauce and toppings, rather than only the dough.
