Potato Gnocchi

Potato gnocchi are the little dumplings most people picture first. Their appeal is a soft center and a mild potato flavor that leaves plenty of room for the sauce.

Rustic brown-skinned potatoes, one cooked potato broken open to reveal fluffy pale flesh, a mound of soft pale gnocchi dough and several small uncooked ridged gnocchi on an old maple workbench.

Potato is the main ingredient

Flour holds the dough together, but potato gives it its character. Some versions contain egg and others do not. Spinach, beets and other vegetables can become part of the same basic family without making the potato disappear.

From soft to golden

The same kind of dough can feel quite different on the plate. Gnocchi in tomato sauce stay tender, a browned skillet version gains a thin crust, and a bake brings melted cheese and crisp edges. A board's patterned surface gives the small dumplings their familiar handmade detail.
