Leftover Mashed Potato Gnocchi

A bowl of leftover mashed potatoes already has some of the makings of gnocchi. Milk and butter give this dough a richer starting point than plain cooked potato.

A richer potato base

Leftover mash may contain milk, cream, butter and seasoning. Those ingredients become part of the dumplings rather than a sauce added later. The result belongs to the potato gnocchi family, with a character shaped by the mash itself.

A new dish from a familiar side

The appeal is more than using up leftovers. Mashed potatoes become small, sauce-coated dumplings with a different texture from the original side dish. Their mild flavor leaves room for a simple butter finish or something sharper alongside it.
