Cauliflower Gnocchi

Cauliflower brings a mild vegetable flavor to gnocchi, with a more savory edge than potato. A golden crust makes that contrast especially noticeable.

A small white cauliflower head, a cut floret and a small mound of pale cauliflower gnocchi dough on a wooden surface, soft ivory palette and subtle flour dust.

A vegetable with a supporting cast

Cauliflower supplies the bulk of these dumplings, while flour, starch or cheese gives each mixture its structure. That balance varies between recipes. Some versions contain wheat flour, while others rely on ingredients such as cassava, tapioca or coconut flour.

Soft centers, savory edges

A browned surface gives cauliflower gnocchi a toasty flavor that suits sage butter, Parmesan and garlicky greens. Tomato sauce takes them in a brighter direction. The vegetable's mildness leaves plenty of room for either, without requiring every dish to taste strongly of cauliflower.
