Corn Gnocchi
Corn gnocchi can be sweet, toasty or distinctly earthy, depending on the corn in the dough. Fresh sweet corn, cornmeal and masa harina do not bring exactly the same flavor.

Several forms of corn
Cornmeal and grits contribute a more pronounced grain flavor. Masa harina has the distinctive flavor of corn prepared for masa, while fresh sweet corn brings more sweetness. Blue cornmeal also changes the color. Corn joins potato in the recipes here, and the doughs also contain wheat flour.
A different set of companions
Cheddar, chiles and lime feel at home beside corn, as do shrimp and savory sausage. These combinations emphasize the corn itself rather than treating the dumplings as a neutral base. Their flavor is quite different from Roman semolina gnocchi, which are made with wheat.
