Cottage Cheese Gnocchi

Cottage cheese brings a gentle tang to gnocchi. The familiar curds become part of a smooth dough, giving these dumplings a different character from plain potato or ricotta gnocchi.

Cottage cheese is the base

The cheese supplies the body of the dumpling rather than a topping or filling. Egg and flour give the dough structure, while its flavor stays recognizably dairy-rich. The version here contains no potato.

Similar to ricotta, but not identical

Ricotta tends toward a milder, sweeter flavor; cottage cheese has a slight cultured sharpness. Butter suits both, but sour cream and fresh herbs draw out the tang of cottage cheese especially well.
