Sweet Potato Gnocchi

Sweet potato gnocchi have a flavor of their own before any sauce reaches the plate. The sweetness is noticeable, but these are savory dumplings with plenty of room for herbs, cheese and vegetables.

One orange sweet potato split open after baking with soft orange flesh, another whole sweet potato and several warm orange uncooked gnocchi on a pale wood board.

Color tells only part of the story

Orange sweet potatoes give gnocchi a warm color and a familiar sweetness. Purple varieties make a strikingly different-looking dough, though they are still sweet potatoes. Ube is a separate purple yam and belongs to a different recipe.

Sweetness benefits from contrast

Sharp cheese, lemon, leafy greens and earthy mushrooms keep sweet potato gnocchi from feeling one-note. A browned finish adds another contrast between the crust and the soft center. Butter-based sauces suit that richness, but olive oil and plant-based toppings belong here too.
