World of Gnocchi

Zucchini Gnocchi

Zucchini gnocchi have a mild flavor and green flecks running through the dough. They sit at the gentler end of vegetable gnocchi, far from the sweetness of squash or the earthiness of beets.

Two fresh green zucchini, one cut lengthwise to expose pale flesh, alongside pale gnocchi dough with delicate green flecks and a few uncooked dumplings.

More than a summer topping

Zucchini is part of these dumplings, not simply a vegetable scattered around them. It can join potato in a soft dough or form a potato-free mixture with cheese and flour. The name covers both approaches.

Delicate flavor, different finishes

Herb pesto and garlic butter keep the zucchini flavor easy to notice. A crisp, browned version with tomato sauce has a more robust character. Zucchini contributes moisture as well as flavor, which is why its dough has a different balance from plain potato gnocchi.
