Bacon Gnocchi

Bacon gives mild potato gnocchi a salty, smoky edge. Small crisp pieces break up the soft texture, while bacon in a sauce spreads that flavor through the whole bowl.

Richness likes a little contrast

Cream makes bacon taste rounder and less sharp. Tomato takes the opposite direction, bringing acidity against the pork fat. Mushrooms deepen the savory flavor, while spinach adds tender leaves and a slight bitterness.

Where the crispness goes

In a creamy bowl, most of the pleasure is in the soft gnocchi and smoky sauce. A cheddar bake offers a different mix of textures, with browned cheese and exposed pieces of bacon on top. Bacon in soup becomes softer still, leaving its flavor in the broth rather than supplying a crunchy garnish.
