Butter Sauce for Gnocchi

Butter is a sauce choice that leaves room for the dough. Potato, cheese, and vegetable gnocchi all keep more of their own character under a light coating than they would beneath a strong tomato or blue-cheese sauce.

Butter curls on a ceramic dish beside a small saucepan of nut-brown butter containing a few toasted milk solids, saucepan rests on a trivet.

Why brown butter tastes different

Brown butter gets its toasted aroma from browned milk solids. That gives it a flavor often described as nutty, even when there are no nuts in the dish. Melted butter is gentler and more milky. The two can look like similarly simple finishes but taste noticeably different beside the same gnocchi.

Soft gnocchi or browned edges

With soft gnocchi, butter makes the plate feel quiet and rich. Crisp gnocchi bring a contrast of browned surface and tender center, so the sauce can stay simple without the meal feeling one-note. Sweet potato, squash, and Brussels sprouts give brown butter another point of connection through their own sweetness or roasted flavor.
