World of Gnocchi

Gnocchi with Vegetables

Gnocchi are soft and mild, which leaves vegetables plenty of room to shape the meal. A plate can feel crisp and roasted, soft and saucy, or fresh enough for a salad without changing that basic partnership.

Roasted edges or a soft accompaniment

Roasted vegetables bring concentrated sweetness and browned surfaces. A softer accompaniment such as ratatouille mingles more closely with the gnocchi, with vegetable juices becoming part of the sauce. Those are different moods of dinner, even when several of the same vegetables are involved.

The vegetables needn't stand alone

A vegetable-forward dish can also include fish, meat, or beans. Fennel has a different presence alongside fish than cabbage does beside a nutty buckwheat dough. The interesting part is the relationship between the vegetable and the rest of the plate, not simply the number of vegetables in the recipe.
