Gnocchi with Gorgonzola

Gorgonzola doesn't disappear quietly into a gnocchi sauce. Its blue-cheese flavor remains the point of the dish, with mild potato gnocchi giving it a soft background.

A creamy blue-veined Gorgonzola wedge and a spoonful of pale blue-cheese sauce on separate small stoneware dishes, pear and walnut hints at the edge, restrained still life.

Dolce and piccante

Dolce is the softer, milder style of Gorgonzola. Piccante is firmer and more assertive. That difference matters in a sauce, where the cheese flavors the whole coating. The name piccante refers to the stronger cheese character here, not to added chile heat.

Sweetness gives the cheese a contrast

Pear gives blue cheese something sweet to play against, while walnuts bring a firmer bite. The three make a more varied plate than a smooth cheese sauce alone. In a four-cheese blend, Gorgonzola meets milder cheeses instead; its sharper flavor remains noticeable, but fruit isn't part of the contrast.
