World of Gnocchi

Gnocchi with Olive Oil

A light olive-oil dressing leaves browned edges, vegetable textures, and the flavor of the dough easy to notice.

Not a cream sauce with something missing

Olive oil dishes have a character of their own. Juices from tomatoes or other vegetables can become part of the dressing, while browned mushrooms or onions stay distinct. The result is often looser than a creamy bowl, with the ingredients connected by a light coating rather than bound into a single sauce.

Room for the browned surface

Crisp gnocchi have a texture worth noticing. An oil-based finish lets that surface remain a prominent part of the dish, especially beside roasted vegetables. Softer gnocchi offer a different pleasure, with a glossy finish and a more delicate bite. Both can carry bright citrus flavors without turning into a lemon cream sauce.
