Gnocchi with Peppers

Sweet peppers give gnocchi a generous vegetable flavor without making the dish hot. Their sweetness becomes especially noticeable beside savory sausage or browned dough.

Red and yellow bell peppers, one split to reveal seeds and pale ribs, beside a small bowl of smooth roasted red pepper sauce on a dark wooden counter.

A red sauce beyond tomato

Roasted red pepper sauce has a rounder, sweeter character than a sharp tomato sauce. It can feel smooth and rich without tasting primarily of cheese. Romesco offers another pepper-based direction, with a more textured character of its own. The red color doesn't tell the whole story of either sauce.

Peppers as part of the meal

Tender strips of pepper keep their identity beside gnocchi, with sweetness in individual bites rather than throughout a coating. That works in vegetable-forward dishes and in sausage pairings. The contrast with crisp gnocchi is particularly clear: soft, juicy vegetables against browned edges and a tender center.
