World of Gnocchi

Salmon Gnocchi

Salmon has enough richness of its own to make a complete gnocchi dinner with just a light coating. Cream offers a different pleasure, surrounding the fish and dumplings with a soft, mellow sauce.

Dill is more than a garnish

Its fresh, grassy flavor gives salmon a welcome contrast, especially in a creamy dish. Lemon adds acidity and a citrus aroma, while shallot and white wine make the sauce more savory. The result stays recognizably about the fish.

The appeal of a sheet-pan dinner

Without cream, salmon, green beans, and gnocchi keep more of their individual textures. Olive oil and lemon connect them without creating a thick sauce. Compared with the creamy version, this is a plate of distinct pieces rather than a softly coated bowl.
