World of Gnocchi

Tuna Gnocchi

Tuna and gnocchi make a substantial salad without a cream sauce. The potato dough supplies the soft, starchy part of the plate, leaving room for vegetables with crunch and a dressing with acidity.

A familiar salad with a different potato

Green beans, eggs, tomatoes, and olives give the Niçoise-inspired combination its variety. Gnocchi take the potato element in a softer direction, with small dumplings among the flakes of tuna and firmer vegetables.

Vinegar earns its place

Tuna, egg, and olive oil are all rich ingredients. Red wine vinegar and Dijon give them a sharper finish, while arugula adds a peppery leaf. Large flakes of fish and recognizable vegetables keep the dish from feeling like a uniformly dressed pasta salad.
